
One of the most famous Thai dishes, Pad Thai is also a most delicious fast food. We can find this dish almost everywhere from street vendors to Thai households; not only because of preparation, but also the flavor please the palates of food lovers.
Ingredients
1 tbs. finely chopped shallot ,1 pc. firm tofu, thinly sliced
1 tbs. choppped garlic ,3 eggs
8 tbs. vegetable oil ,1/2 kg. bean sprouts
3 tbs. fish sauce ,50 gms. salted turnip, finely chopped
4 tbs. sugar ,2 limes, halved
2 tbs. dried shrimps ,150 gms. chives, in 1 inch lengths
1 tbs. white peper ,1 tsp. red peper flakes
300 gms. thin noodles ,5 black tiger prawns
Directions
Heat 3 tbs. of vegetable oil in a pan and fry the garlic and shallot, then add the thin noodles and sprinkle with water until the noodles turn soft. Add the fish sauce, sugar and tamarind juice, stir quickly. do not let the noodles strick together and leave at the side of the pan. Heat another 3 tbs. oil and add the salted turnip, tofu, fresh black tiger prawns and dried shrimps. Stir and mix together with the noodles and leave at the side of the pan. Heat the remaining 2 tbs. oil, crack the eggs into the pan and spread thinly. Mix in the prepared noodles, add chives and bean sprouts. Transfer to a serving dish and sprinkle with roasted peanuts, white peper, and garnish with the uncooked chives and bean sprouts.
Yummy Tip -Serving : 5 persons -preparation Time : 10 min
Soak the thin noodles for 2-3 minutes before cooking to soften. Gradually add the cooking oil. Constantly check the noodles, if they are still dry and hard, sprinkle with water or add more oil. For more flavor, add red chili flakes and lime juice. Eat with the raw bean sprouts and chives.
